The Sweet & Spicy Burn: Spitfire Honey-Butter Fried Chicken Biscuits
Share
When most people grab a bottle of Spitfire Seas-n-All, their mind goes straight to the smoker or the grill—ribs, pork shoulder, or smoked wings. But if you’re only using it as a BBQ rub, you’re missing out on half the fun.
Spitfire Seas-n-All was designed with ghost pepper heat and a robust blend of savory spices that make everything pop—including comfort food classics.
Today, we’re flipping the script on traditional spicy chicken with Spitfire Honey-Butter Fried Chicken Biscuits. We’re pairing ultra-crispy, Spitfire-seasoned fried chicken with a warm, ghost-pepper-infused hot honey butter, all sandwiched inside flaky buttermilk biscuits.
The richness of the butter and biscuit perfectly cuts through the slow, addictive ghost pepper burn. Let’s get cooking!
Prep & Yield
- Prep Time: 15 minutes (Plus 30 mins marinating)
- Cook Time: 15 minutes
- Servings: 4 massive biscuit sandwiches
- Heat Level: 🌶️🌶️🌶️🌶️ (Spicy, but balanced!)
Ingredients
For the Chicken & Crispy Dredge:
- 1 lb boneless, skinless chicken thighs (cut into 4 biscuit-sized pieces)
- 1 cup buttermilk
- 1 cup all-purpose flour
- ½ cup cornstarch (the secret to extra-shatteringly-crispy chicken)
- 1 ½ tbsp Spitfire Seas-n-All Seasoning (divided)
- High-heat oil for frying (peanut or vegetable oil works best)
For the Spitfire Honey-Butter Glaze:
- ½ cup (1 stick) unsalted butter, melted
- ¼ cup honey (or hot honey if you want extra kick)
- 1 tsp Spitfire Seas-n-All Seasoning
- ½ tsp garlic powder
To Assemble:
- 4 large buttermilk biscuits (warm and split)
- Bread & butter pickle chips (for that crucial sweet crunch)
Step-by-Step Instructions
1. Marinate the Chicken
In a large bowl, whisk together the buttermilk and 1 tablespoon of Spitfire Seas-n-All. Add your chicken thigh pieces, making sure they’re completely submerged. Cover and let marinate in the fridge for at least 30 minutes (or overnight for maximum tenderness).
2. Mix the Crispy Dredge & Honey Glaze
- The Flour Dredge: In a wide, shallow bowl, combine the flour, cornstarch, and the remaining ½ tablespoon of Spitfire Seas-n-All.
- The Spitfire Honey-Butter: In a small saucepan or bowl, whisk together the melted butter, honey, garlic powder, and 1 teaspoon of Spitfire Seas-n-All. Keep warm.
3. Fry to Golden Perfection
- Pour 1 to 2 inches of oil into a heavy cast-iron skillet or Dutch oven and heat to 350°F (175°C).
- Pull the chicken from the buttermilk, letting excess drip off, and dredge thoroughly in the flour mixture. Pro tip: Press the flour firmly into the meat to create craggy, extra-crispy bits!
- Fry for 5 to 7 minutes, flipping halfway through, until deep golden brown and the internal temperature hits 165°F. Transfer to a wire rack to drain.
4. Glaze & Assemble
- While the chicken is piping hot, generously brush or dunk each piece into the warm Spitfire Honey-Butter.
- Place a glazed chicken thigh on the bottom half of a warm biscuit.
- Top with 2–3 pickle chips, drizzle another spoonful of honey-butter over the top, and cap it with the top biscuit.
