Instructions

Phase 1: Preparation (Mis en Place)

Hibachi cooks extremely fast. Do not skip this phase!

  1. Cut & Organize: Cut steak into uniform 1-inch cubes. Pat shrimp dry. Keep proteins in separate bowls. Chop all vegetables to uniform sizes so they cook evenly.
  2. Rice Prep: Ensure your rice is cold and dry. This prevents it from becoming mushy on the hot griddle.
  3. Create Finishing Sauce: In a small bowl or squeeze bottle, whisk together the Soy Sauce, sesame oil, and a tablespoon of minced garlic (optional).

Phase 2: Griddle Setup

Establish different heat zones on your outdoor griddle to cook everything at once.

  1. Zone 1: Hot Searing (Center): Set to Medium-High.
  2. Zone 2: Moderate Cooking (Side): Set to Medium.
  3. Zone 3: Holding/Cool Zone (Opposite Side): Set to Low or Off.

Phase 3: The Cook

Step 1: Launch the Fried Rice and Steak

  • Rice (Zone 2): Add 1 Tbsp of oil to the moderate zone. Spread the cold Rice evenly. Add one pad of Butter and 2 Tbsp of soy sauce. Flatten the rice with your spatulas and let it sizzle undisturbed for 2 minutes to build texture.

  • Steak (Zone 1): Add 1 Tbsp of oil to the hot zone. Immediately add the Steak Cubes.

  • The Steak-n-Burger Dusting: This is the key step. Liberally dust the entire top surface of the steak cubes with Steak-n-Burger Seasoning. Do not move the steak for 2 minutes to build a caramelized, flavorful crust.

Step 2: Vegetables and Veggie Seasoning

  • Steak Flip: After 2 minutes, flip the steak cubes. Season the new raw side again with Steak-n-Burger Seasoning.

  • Veggies: In the space between the Steak and Rice, add 1 Tbsp of oil and toss the Veggies (zucchini, carrots, onion).

  • Veggie Dusting: Give the vegetables a light dusting of Steak-n-Burger Seasoning as they cook.

  • Finish Rice: Push the rice to the outer edge of Zone 2. In the cleared space, add 1 pad of Butter. Crack the 3 Eggs and scramble them. Once set, chop aggressively and fold them into the rice.

Step 3: Launch Shrimp and Move Steak

  • Move Steak: Move the now-seared steak cubes to Zone 3 (Cool Zone) to finish cooking slowly and stay warm.

  • Shrimp (Zone 1): In the hot zone where the steak was, add 1 pad of Butter and the Shrimp.

  • Shrimp Dusting: Lightly season the shrimp with Steak-n-Burger Seasoning. Shrimp will cook very fast (2-3 minutes total). Flip them once they turn pink on the bottom.

Step 4: The Grand Finale Toss

  • Combine Forces: Gather the seared steak, shrimp, and vegetables from their separate zones into the center hot zone.

  • One Last Dusting: Give the entire pile one final, liberal dusting of Steak-n-Burger Seasoning.

  • Glaze: Drizzle your prepared Finishing Sauce (soy mixture) and the final pads of butter over the protein/veggie pile. Aggressively toss and chop for 30 seconds until the sauce has glazed the caramelized crust created by the seasoning.

Serve immediately alongside the fried rice and your favorite dipping sauces like Yum Yum or Ginger sauce (recipes below for homemade sauces).

    • 1/2 cup Soy Sauce
