Years ago, we were messing around in the kitchen, trying to whip up something entirely different. A spill here, a dash of sweet heat there, a wild idea to throw real ghost pepper into a cool, creamy ranch base, and boom—Spitfire Ranch was born.
We didn't set out to make one of our most popular sauces that day, but the kitchen had other plans. It instantly became a fan favorite because it does the impossible: it gives you that familiar, herb-forward comfort of ranch, a touch of unexpected sweetness, and a sudden, fiery kick of ghost pepper that keeps you coming back for more.
There is no better canvas for this legendary sauce than a proper, diner-style double smash burger. Whether you are firing up the Blackstone flat-top on the patio or heating up a heavy cast-iron skillet on the stovetop, here is how to build the ultimate Spitfire Ranch Smash Burger at home.
The Anatomy of the Spitfire Ranch Burger
To make this burger work, every layer has to serve a purpose. We are combining rich, savory, spicy, and sweet elements to create a perfect bite:

The Bun: A soft, toasted brioche bun to hold it all together.

The Beef: 80/20 ground beef, heavily seasoned and smashed paper-thin.

Step 1: Prep Your Toppings (The Setup)
Before you touch the beef, you need your toppings ready to go. Smash burgers cook incredibly fast, so there is no time to slice or grill once the meat hits the hot metal.

Sauté the Veggies: In your cast iron or on one side of your Blackstone, grill up some sliced onions and jalapeños in a little butter or bacon grease until they are soft and slightly charred. Set them aside. Be sure to season them with our Mild Seas-n-All for an even better flavor. To kick the spicy up even more, season with our Spitfire Seas-n-All.

Toast the Buns: Spread a thin layer of butter on your brioche buns and toast them until they are golden brown. This creates a barrier so the burger juices don't make the bread soggy.
- Prep the Bacon: Have your bacon cooked crispy and ready to go.
Step 2: How to Get the Perfect Smash (The Science of the Sear)
The secret to a legendary smash burger is the Maillard reaction—the chemical reaction that happens when meat hits intense heat, creating that beautiful, deeply savory, crispy brown crust. To get those coveted, lacy Maillard edges, you need screaming-high heat, a dry cooking surface, and a heavy-duty metal spatula.

Shape the Meat: Divide your 80/20 ground beef into 2-ounce to 3-ounce balls (we use 4-ounce balls on our food truck). Do not overwork the meat; keep it loose so it's easier to smash.

Get the Cooking Surface Screaming Hot: Crank your Blackstone burners to high, or heat your cast-iron skillet on the stove until it is lightly smoking. Do not add oil to the cooking surface—we want the beef to stick slightly to the hot metal, which is exactly what creates that epic, crusty sear.

The Smash: Use a heavy metal spatula to press straight down (a smash burger press is best). If you're using a Blackstone, a heavy-duty griddle press works wonders. Press hard—you want the patty to be incredibly thin, especially around the edges, to lock in those crispy, lacy Maillard borders. Hold down for a solid 5 seconds.

Season Heavily: Once smashed, immediately hit them with a good pinch of both our Mild Seas-n-All and Steak-n-Burger seasoning.

The Flip: Let the patty cook undisturbed until the middle is starting to brown and the edges are dark brown and crispy. Use a sharp metal spatula to scrape completely underneath the patty (we use a sanitized 4" putty knife), ensuring you don't leave that beautiful crust stuck to the pan. Flip it over.
- Add the Cheese: Immediately place a slice of white American cheese on top of both patties. On a hot Blackstone or cast iron, it will melt in about 15-30 seconds. Stack and remove the patties from the heat.
Step 3: Build Your Masterpiece
Now, we assemble.
- Place your bottom toasted brioche bun on a plate.
- Stack your double smash patties (with that perfectly melted white American cheese) on the bottom bun.
- Top the patties with your crispy bacon and a generous pile of the grilled onions and jalapeños.
- Drizzle a heavy-handed amount of Spitfire Ranch right over the top of the veggies.
- Crown it with the top bun, take a second to admire those crispy edges, and dig in.
